WHFoods: Mushrooms, shiitake

A couple things that I would like to highlight with this page and are new to this page that whfoods.com has not added yet but sent me in an email.

1. For Vegans that don't get animal source of iron, Shiitake Mushrooms can be a great source of available iron in mushroom form. (The 'steak' of the mushroom world).

2. The Shiitake is produced in a sustainable way. Having so many crops like-soy beans and corn- continue to be hard on the environment and make the environment prone to erosion and depletion of nutrients. Mushrooms give back to the environment and the way Shiitake is grown they give back to the forest. Some farmers are not only growing them organic but they are growning them in a forest environment. Idealistically I would like to see foods grown within large forests, but we have come a long way from this with many million hectares of crop land.
